chickpea salad sandwiches


One of my favorite things to eat for lunch is a chickpea salad sandwich. It's sort of like tuna salad, except made with chickpeas instead of tuna. It's stupidly easy to make so I don't measure anything, but if I had to try to give you a recipe, I guess it'd be something like:

Chickpea Salad
2 cups chickpeas (alias garbanzo beans) or about 1 can
2-4 tbsp soy mayonaise (I think Vegenaise tastes best)
2-4 tbsp sweet pickle relish
1-2 stalks celery, chopped
1 tsp lemon juice
freshly ground pepper to taste

Personally, I just put the chickpeas in a bowl, add a little vegan mayo and lemon juice, mash, add the relish, celery, and pepper, mix, and then taste it to decide if I want more vegan mayo or relish or whatever. It's done when it tastes right. Very simple!


The bread in the picture above is Irish Potato Brown Bread fresh from the bread machine. I think this is my new favorite bread. It's mostly whole wheat but with a really soft texture that comes from the instant potato flakes and bit of margarine in the recipe. I may have to revise my recommendation of the Bread Lover's Bread Machine Cookbook to be more favorable, because this bread is fantastic!
