100% whole wheat... dough bun


I'm currently bunnysitting my niece's bunny, who just happens to be named Dough, so I titled this post in her honor. She's the sweetest little bun! The bread I made today, and not of course the bun pictured above, is whole wheat. The recipe I used was adapted from the 100% whole wheat loaf in The Bread Lover's Bread Machine Cookbook. It still has a lovely whole wheat flavor, but the added rolled oats make it a little bit lighter, and the blackstrap molasses adds calcium. You can replace the 1/3 cup rolled oats with whole wheat flour for a truly 100% whole wheat bread, if you'd like. This is the best wheat bread I've ever made or tasted, so you should try it if you have a bread machine! Recipe below.



Whole Wheat Bread

makes 2 lb. bread machine loaf

3/4 cup water
3/4 cup rice, soy, almond, etc. milk (vanilla ok, too)
2 Tbsp canola oil
1 Tbsp blackstrap molasses
3 Tbsp maple syrup
3 2/3 cups whole wheat flour
1/3 cup rolled oats
3 Tbsp gluten
1 3/4 tsp salt
1 Tbsp + 1/2 tsp bread machine yeast

Directions:
Put all ingredients in the bread pan in the correct order for your bread machine. Set crust to medium and program for the Whole Wheat cycle. Press Start. Remove bread from pan immediately after baking and allow to cool on a rack.

hey celine, i really love this bread, so you'll have to let me know how it goes for you! i think it's the perfect sandwich bread... i know i've been really bad about updating lately, and i'll probably keep being bad for the next two weeks or so because it's the end of the quarter... i promise at least one entry a week, though! :)

I just put all the ingredients for it in the machine! only about 4 hours to go before I see the outcome! more before I get to actually taste it, of course, but yay!!!

wow celine, were you really baking bread at 2am, or has my timestamp just gone crazy?!?

i'm so glad that you liked the bread. i'm going to put a batch in the breadmaker soon, adding wheat germ as per your germy bread... yum!
