scalloped potatoes


I tried veganizing scalloped potatoes for tonight's dinner; I think they came out pretty well. You could fancify this recipe I'm sure, and I might try doing so next time, but I wanted to keep it simple on our first date.

Vegan Scalloped Potatoes
1/2 cup chopped white onion
1-2 cloves garlic
1-2 Tbsp margarine
2 Tbsp all-purpose or whole wheat pastry flour
1/2 tsp salt
1/4 tsp black pepper
1/4-1/2 tsp paprika
pinch-1/4 tsp nutmeg (optional)
1 1/4 cups plain soy milk
3 medium Yukon gold (or white, red, or russet) potatoes (1 lb.), sliced thinly and peeled if desired
fresh parsley, chopped (optional)

Preheat oven to 350. Lightly grease (or spray with nonstick spray) a 1 1/2 qt. casserole dish.

Sauce:
In a small saucepan, cook the onion and garlic in the margarine until tender. Stir in flour, salt, paprika, pepper and nutmeg (if using). Add all the milk. Cook, stirring, over medium heat until thickened and bubbly.

Assemble:
Thinly slice potatoes. Place half the sliced potatoes in the casserole. Cover with half the sauce. Repeat potato and sauce layers with remaining ingredients. Optional: sprinkle top with parsley and more paprika to taste.

Bake:
Bake, covered, for 40 minutes. Uncover and bake 15-20 minutes more, until potatoes are tender.

ps: I checked the ingredients again and yup, I have everything. what cracks me up the most is that I have EXACTLY three potatoes in my crisper. I mean, what are the odds, right?
I think I'll make this for tomorrow night's dinner. I'll let you know how it turns out!

hey, c.: yeah, i hadn't had them since i was a wee child, so i hardly remembered how they were supposed to taste, but they were very creamy and yummy. you could add things to spice them up a bit, if you wanted, too. i noticed that vive le vegan, for example, has a really zippy-looking recipe for scalloped potatoes. i wanted something more traditional, but you might look at dreena's... i think some more traditional recipes add a pinch of nutmeg and 1/4 tsp dry mustard, and i may (or may not) try that addition next time. anyway, hope it goes well!

my mom totally used to put nutmeg in hers and I remembered too late BUT it came out incredible and I can't wait to have more of it tomorrow! thank you for that wonderful recipe, TB!

hey c: i'm so glad! i was thinking of asking my mom for my grandma's recipe, but my mom's in italy for 3 weeks so that wasn't an option and i didn't like to bother anyone else with the questions... i think my grandma's relied really heavily on cheese, though? maybe. it's been a long time :) i will probably try adding a little nutmeg next time though, and maybe even the mustard... i'm glad they came out well for you, though!

dgmgv: yeah, i know, veganizing those old traditionals is really fun. it's such a challenge because they all seem like they couldn't be veganized, but then you try and... scalloped potatoes! it's fun to surprise people who think vegans eat nothing but tofu and twigs. :)

i went ahead and added the nutmeg to the recipe, since i'm sure that's how i'll make it next time.

just wanted to tell you: I usually am against having leftovers last me for days and days and days, but the scalloped potatoes? it's a whole different story. I was even reluctant to let Chaz have his portion last night, thinking of what I could whip up instead so that I could have his portion for myself today. selfish much? needless to say your recipe will become a staple of ours now. thank you again!

wow, k, how'd you miss the scalloped potatoes? they were a grandma staple in my experience :)

mihl and bazu: yup, these are awesome comfort food, you should definitely give them a try.

celine: i dooubled the recipe when i made it b/c i had 6 potatoes to use up and we are STILL enjoying those leftovers. and when i say enjoying, i mean enjoying. the last of them will go towards today's lunch. with leftover chili on the side. yay! :)
